| PORK BUN MIX |
Total Cooking & Preparation time: 45 minutes
2 pork tenderloins, 1cm dices
2 tbsp. garlic triangle (garlic, shallots and onions)
3 white onions, finely diced
2 pkt red dates roughly chopped 1˝ cups dates – chopped roughly
1˝ cups mission figs – chopped roughly
3 granny smith apples, peeled and diced into ˝ cm pieces
1 cup julienned, crystallized ginger
4oz soy sauce 4oz chicken Stock
˝ container of Maltose
METHOD: In smoking hot pan sear off pork dices with salt and four spice until browned on outside but only cooked to Medium-Rare. Remove from pan and leave to cool.
Sweat out onions and triangle (garlic, shallots and onions) with a small amount of colour. Add both dates, figs, soy, stock and maltose. Cook on low heat. Remove from heat and add ginger and apple. Leave to cool then add pork.
Roll with dough, 100g mix and 80g dough. Steam for 25 mins. Then deep fry to order.
